This dreamy chia pudding bowl will get your day started on an energizing note.

You may or may not have made chia pudding in the past and know how simple and tasty it is. I personally have made my fair share of chia puddings, and like anything, I've gone through phases where it's my go-to breakfast, snack, or even dessert, and phases where I don't touch chia seeds at all.

I truly love chia seeds for their amazing health benefits, but don't always enjoy the consistency of them. I've now found alternative ways to eat these super seeds that are packed with protein, healthy fats (omega-3), fiber, antioxidants, calcium, and iron. Simply blending them into things makes a creamy and dreamy consistency.

This pudding feels like yogurt, but better! Topping it with fresh fruit and melted chocolate makes for a supercharged breakfast or dessert. I'm all about adding more nutrients to my nutrients, so there's no reason not to have delicious superfood chocolate for breakfast.

1 cup full-fat coconut milk

3 Tablespoons chia seeds

1 Tablespoon raw honey

1/4 teaspoon vanilla (extract or powder - I used powder)

Pinch of sea salt

1 IGNITE Chocolate Bar (or your favorite Live A Lot bar), melted

Sliced fresh peach

Unsweetened coconut flakes

Dried cherries

  1. Place all pudding ingredients in a blender and blend until smooth. Transfer to a bowl and let sit for 5 minutes to thicken.
  2. Top with desired toppings and enjoy!
