Raw Oatmeal Cookies (The Cupboard SF)
Raw Oatmeal Cookies with Live A Lot Chocolate Sauce
- 1 tbsp Live A Lot chocolate spread
- 1 cup quick rolled oats, split in half
- 1/4 cup nuts like cashew, coconut, or walnuts
- 1/4 cup nut butter like almond or sunflower
- 1 tbsp raw cacao powder
- 2 tbsp coconut oil
- 1-2 tbsp maple syrup or coconut sugar
- pinch of sea salt
Add 1/2 cup of the rolled oats in a food processor with the nuts, pulse for a few seconds. Next pour in the remaining ingredients, pulse until it becomes well mixed, scraping the sides as needed. Add the remaining 1/2 cup of rolled oats and pulse again. Taste and make any adjustments you desire.
With a 2oz cookie/ice cream scooper, measure out the cookies and place on a plate. I like to use the side of the food processor bowl as a way to press the dough into the mold. They should come out without much effort. If you find they're sticking to the scoop, rub the inside of the mold with a little coconut oil. Alternatively, you can use two spoons to create each cookie.
Once the dough is all used up, drizzle Live A Lot chocolate on top of each cookie!
Place cookies in the freezer for 15 minutes before enjoying!
Store any leftovers in an airtight container in the freezer.
